Roasted Beet Salad with Feta

6 T extra virgin olive oil
2 & 1/2 T red wine vinegar
1 T minced garlic
salt and pepper
7 medium beets
1 cup water
2 T capers, drained and chopped (optional)
3/4 cup feta

which oil, vinegar and garlic in a small bowl to blend. season dressing generously with salt and pepper. arrange beets in a singe layer in the bottom of a baking dish and add 1 cup water. cover and bake at 375 degrees until beets are tender when pierced with a knife, about 70 minutes. peel beets while warm. cut beets in half and slice thinly. transfer to a large bowl. mix in capers and 1/4 cup dressing. season with salt and pepper. arrange beets in the center of a platter, season to taste with salt and pepper and sprinkle with feta. drizzle with dressing and enjoy!
