ben's roasted roots

Take any of the roots, squash, potatoes, sweet potatoes, leeks, garlic, onion, ect and cube them to similar sizes.  Coat with olive oil, salt and pepper to taste, add savory herbs and bake in oven at 375 til done.  Broil the last few minuets to make golden brown….  or add grated cheddar cheese at the end…
