Sweet Potato Biscuits

2 cups flour
½ tablespoon baking powder
¾ teaspoon baking soda
1 teaspoon salt
¼ tsp black pepper
¾ cup toasted pecans
3 cups sweet potatoes peeled and cut
3 tbl lemon juice
2 tbl maple syrup
½ cup olive oil
1 cup soy or oat milk
½ cup water


Steam sweet potatoes. Mix dry ingredients together in a bowl. Puree sweet potatoes and wet ingredients. Mix dry ingredients and sweet potato puree together. With a spoon, create blobs and place them on an oiled pan. Bake for 30-35 minutes at 350 degrees.
