From the Recipes from a Kitchen Garden Cookbook

2 unpeeled eggplants or enough for 12 one inch slices
4 T good olive oil
4 cloves garlic, each cut into 6 or so slivers
salt and pepper
parsley

Preheat the oven to 325 degrees. Cut the eggplant into one inch slices. Oil two baking dishes. Insert slivers of garlic into each eggplant slice and arrange on a single layer on the pans. Pour olive oil over the eggplant. season with salt and pepper. Bake for 25 minutes and sprinkle with parsley before serving.
