goat cheese crumbles
Wrap each beet in foil and bake at 350 degrees for about 45 minutes. Remove from oven, cool a bit and slip off skins. Dice beets and arrange on lettuce/greens with orange sections and goat cheese crumbles. Dress with a vinaigrette of olive oil, balsamic vinegar and orange juice. Sprinkle with caramelized pecans.
