1 head of kale
Crumbled feta to taste
Fruit of choice (suggestions: pomegranate or chopped apple)
Nuts of choice (optional)
4 Tbs. apple cider vinegar (may use red wine vinegar)
2 Tbs. honey (more/less to taste)
6 Tbs. olive oil
2 Tbs. finely chopped shallot
Salt & pepper to taste
Cut the kale into thin ribbons, trimming out the thick stems. Finely chop the shallot. Mix all dressing ingredients in a bowl or plastic container. Pour dressing on the kale until coated well, adding small amounts at a time. Either shake kale and dressing together in a big sealed container, or massage dressing into the kale ribbons with your hands. Add feta and fruit. Allow the salad to sit for at least 15 minutes or even overnight. If using nuts, add just before serving.
