INGREDIENTS
1 lb. of bacon, chopped 
3 cups sliced yellow onion
2 Tsp. kosher salt
3/4 Tsp. cayenne pepper
3/4 Tsp. black pepper
1 Tbsp. chopped garlic
1 (12 oz.) can of beer or dry hard cider
1/4 cup white vinegar
1 Tbsp. molasses
6 lbs. of mixed greens of your choice (such as mustard, collard, turnip, kale or spinach), rinsed and stemmed
INSTRUCTIONS
Fry the bacon is a large heavy pot over medium heat until crisp.  Add onions and cook for 7-8 minutes until wilted and golden.
Add salt, cayenne pepper, black pepper and garlic and cook for 2 minutes.
Add beer/hard cider, vinegar and molasses and mix well.
Begin adding greens, a third at a time, pressing them down as they wilt to make room in the pot.  Cook uncovered, over medium heat, stirring often, for approximately 1 hour to 1 hour and 15 minutes, and serve immediately.
