vegan option: omit cheese
– I used Jovial’s brown rice pasta
– Instead of roasting the squash in the oven, you could cook it in the pan. Heat the pan to medium, add the squash with a little olive oil, salt, pepper and about ⅓ cup water. Cover and cook until squash is tender and the water has evaporated (15 minutes or so). Remove from the pan and set it aside. Wipe out the pan, and then begin step 3.
