Ingredients

1 1/2 lbs summer squash, sliced
1 onion, sliced
Salt and pepper
Olive oil
Zest and juice of 1 lemon
Parsley, chopped
Mint, chopped
Ricotta Salata

Directions

Preheat a grill to medium high. Toss summer squash and onion with olive oil, salt and pepper. Grill 3 to 5 minutes per side. Toss with more olive oil, lemon zest and juice, and some chopped parsley and mint. Top with shaved ricotta salata.
