Tomatillo Caprese Salad

Tomatillo caprese salad

Combine in a bowl:
1 pint of Tomatillos, diced
1/2 – 1 pint of Tomatoes, halved/diced
3 – 4 sprigs of Basil (regular and/or lemon), shredded
1/2 – 1 cup of Cheese (pick one – like mozzarella, provolone, feta, etc), cubed/sliced

Mix dressing together in separate bowl and then pour over: olive oil, balsamic vinegar
(I used chocolate balsamic vinegar and it was amazing)

Salt and pepper to taste

Allow to sit in the fridge for at least an hour before serving to allow the flavors to combine and develop.
